Shiso / Mitsuba / Kaiware

  Shiso
Shiso LeafKnown as Perilla and Ooba leaves, this ornamental leave provides the background for many sushi dishes and is the perfect companion to a little wasabi, shoyu and a thick slice of maguro. TWF of Hawaii supplies customers with Shiso from California and the Big Island of Hawaii.

Kaiware
Another garnish we supply to our Sushi Bar customers is this radish sprout, Kaiware. Locally cultivated in Honolulu, this is a regular item that comes in a four ounce package.

  Mitsuba
Also known as Japanese Wild Parsley, mitsuba is a delightful Japanese herb with a flavor similar to Angelica. The cress-like young seedlings are used in salads and the stems and leaves are chopped and used to flavor a number of dishes.

Mushrooms

  Enoki Mushrooms
Fragile, flower-like with long, slender stems and tiny caps, Enoki mushrooms grow in small clusters. They have a mild, light flavor with a slight crunch. Used in soups and sandwiches and as a garnish in soups and salads.

  Shimeji Mushrooms
Shimeji MushroomsThe Japanese name for Oyster Mushrooms, The flavor of raw oyster mushrooms is fairly robust and slightly peppery but becomes much milder when cooked. Young oyster mushrooms (1 1/2 inches in diameter and under) like TWF of Hawaii carries are considered the best.

  Matsutake
Matsutake is the common name for a group of mushrooms that the Japanese have considered an autumn delicacy for many hundreds of years. Matsutake is a highly fragrant and edible mushroom that grows in Japanese red pine forests in autumn. Whether grilled or cooked with rice, everyone enjoys the unique aroma and flavor of these mushrooms.

Roots

  Yama Imo
Yama ImoYamaimo is a white root known as mountain yam or mountain potato. It is cut into crisp slices as a crunchy accent to roe sushi, or grated and made into a cold porridge and served with a quail egg on top, a dish for the adventurous.

  Nama Wasabi
A very popular seasoning that goes well with seafood. It is always eaten with sushi and sashimi. Vividly green, wasabi has a strong scent and spicy taste. The proper way to grate wasabi is on sharkskin. If unavailable, use a finely tooth grater in order enhance flavor. Wasabi grows very slowly in clean streams thus it is expensive raw. Wasabi is sold in powder or in tubes of paste.

  Gobo
Burdock root, also known as Gobo, is another Asian vegetable known for its nutrional value. The long root is packed with minerals such as iron, chromium, magnesium, silicon, calcium and potassium. TWF Hawaii's product is sliced and ready for preparation.
